Roasted Veggies and Orzo
I love roasted vegetables and a pasta it makes eating pasta less scary and I made sure to load it up with vegetables. There is noting wrong with eating starchy carbs in moderation and paired with yummy vegetables!
This dish can be made during the week with meat, fish, and a great Shabbas side dish!
1 cup orzo (they make healthier versions at the health food store)
1 yellow squash
1 red pepper
1 cup broccoli
1 handful of sun dried tomatoes
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1 tsp on earth balance
Boil water and make the orzo like you would make pasta. Then prepare a sheet pan sprayed with olive oil/avocado oil. I like to dice my veggies nice and small.
Sprinkle on some salt, pepper, garlic powder.
Bake at 375 for 30 mins until nice and roasted.
Once your orzo is ready place it in a bowl, and add in your roasted vegetables. To add some great texture and flavor, add 1 tablespoon of earth balance and mix it in. (It will melt because everything is already hot.)
